IN THE PAST

donkeys went in circles driving the granite stones which crushed the olives.


The resulting paste was layered between mats, like a giant sandwich, and squeezed to produce the oil


which was stored in containers like these crocks.


Today, new sophisticated machinery does all these things faster and better.

Cleaning
